How We Farm Without Shortcuts

Six commitments we have held since the first batch in 2010.

Palmyra Partnership

We source 100% of our karupatti from multi-generational palmyra tappers in the Thenkasi belt — families who have climbed the same trees for three generations.

Zero Chemicals

No pesticides, no chemical fertilisers, no synthetic flavours. Our ingredient list has never included a compound our grandmothers couldn't pronounce.

Fair Farm Pricing

We pay above-market rates directly to farmers, cutting out intermediaries. Every premium karupatti batch is sourced at a price that makes the climber's livelihood viable.

Minimal Packaging

Cardboard boxes, paper liners, no plastic in our primary packaging. Excess packaging is the enemy of the honest sweet.

Seed-to-Sweet Traceability

We know which district, which farm, which tapper family produced each batch of karupatti. That traceability is the foundation of trust.

Village Economy

60% of our ingredient spend flows directly to rural Tamil Nadu. Supporting Aaladipattiyan means supporting the palmyra belt economy.

Why two districts produce ingredients no other region can replicate.

Karupatti

The Black Laterite of Thenkasi

The Tirunelveli district sits on a band of black basaltic laterite — iron-mineral rich, slightly acidic, and fed by the Tamiraparani river. These soil conditions do something that simply cannot be replicated elsewhere: they give the palmyra sap a distinctive mineral depth that survives the boiling process and shows up as the complex, slightly smoky undertone in authentic karupatti.

The Tamiraparani's mineral profile — higher in iron and magnesium than most South Indian rivers — dissolves into the soil and reaches the palm's root system. When we say our halwa tastes different from halwa made anywhere else, this is why. The water and the soil are part of the recipe.

Cashew (Munthiri)

The Red Laterite of Panruti

Cuddalore district's red laterite is iron-oxide saturated — the same rusty red that gives the Panruti belt its distinctive look. That iron richness, combined with the coastal bay moisture from the Bay of Bengal, creates soil conditions that produce cashew kernels of unusual density. Panruti cashews are rounder, heavier, and have a more complex flavour than cashews from other regions.

We source exclusively from the Panruti belt because the result in our Karupatti Munthiri Roll is noticeably different. The density means each kernel holds its structure when folded into karupatti rather than crumbling — and the subtle coastal flavour note completes what would otherwise be a one-dimensional sweetness.
