Our Story
ஆலடிப்பட்டியான்
Before your city wakes up, before the first cup of tea, a man in Surandai is already barefoot on a palmyra palm, fifty feet above the ground, in the dark. He has been doing this his whole life. His father did it before him. The sap he collects — slowly boiled in iron, never rushed — becomes karupatti. The karupatti becomes your sweet. No machines. No shortcuts. No preservatives. No compromise. That is the only story here.

The Name & The Origin
The banyan tree does not ask to be noticed. It simply stands — roots deep, shade wide, arms open to anyone who needs rest. Aaladipattiyanwas named for that spirit. Not to impress. Not to trend. To give — quietly, completely, generation after generation — because real things don't need to announce themselves.
It began not with a business plan, but with a grief: that the most honest sweet in Tamil Nadu was dying quietly. In Surandai, Tirunelveli, the palmyra groves that had fed families for centuries were being felled. The young men who climbed them were leaving for cities. The iron pans were going cold. Moses Dharma Balan saw this and made a decision — not to document the loss, but to stop it. He went back to the fire. He learned from the old hands. He promised them a price worth staying for.
That quiet decision became APL Sweets & Savouris. Today 70+outlets carry the same zero-preservative promise that started in one kitchen in Surandai — not because it's marketable, but because it was always the only right way.

Where karupatti comes from
🌴The Climber
“Would you climb this for your food?”
Before your day begins, the palm climber's already begun his. Barefoot, 50 feet up, hands that cannot slip. He taps the palm at dawn to collect the sweet sap — pathaneer. It is risk, skill and respect, repeated every single morning. This is where every Aaladipattiyan sweet truly starts.

🔥The Process
“Hours of boiling… for minutes of eating.”
The fresh sap is poured into wide iron pans over a wood fire that does not rest. For hours it reduces — no machines, no additives, no rushing. What remains is karupatti: dark, glossy palm jaggery, richer in iron and minerals than any refined sugar. Patience is the only ingredient you can't buy.

🍯The Product
“This is energy. This hits different.”
Karupatti isn't a substitute for sugar — it's better than it ever was. We fold it into halwa, burfi, laddu and rolls alongside Panruti cashews and pure ghee. One bite carries warmth, depth and a taste of childhood you can't fake. No one says no to it.

🤝The Impact
“Every purchase keeps a tradition alive.”
Palm climbing is disappearing — fewer hands learn it every year. Each sweet you buy supports the climbers, the boilers and the farming families behind it. This is more than business: it's the responsibility of carrying Tirunelveli's living heritage from Surandai to the world.
